What would be the best units to use against orges and those bastards who always pop up behind your army
I think you mean Gorgers?
Well the following units work really well against ogres in general.
For the gorgers, keep a small unit of dryads in reserve around your back lines or just about turn your gladeguard and shoot him. I also have used the alter noble with to chop him apart.

The "A Smart Player Will..." theory is a complete paradox. If we make an assumption that everything we do is outsmarted, then theoretically we can never win.
Skars have given you a good rundown here. Ogres fall victim to arrow fire pretty easily - especially at short range. Their lack of armor hurts them a lot in this regard.
As for gorgers, keeping a unit of skirmishers back near your line will go a long way toward keeping the pesky bugger at bay - generally, anything you can do to keep him from mopping up your weaker troops. Skars is right again - Dryads are ideal for this.
I generally consider Ogres to be one of our easier opponents. Sure, they cause fear, but we've got many ItP troops. And they don't have the normal WE bane of high static CR.
