My first few games will be against Bretonnians so I'm curious as to the best way to fight them. I've read into WE tactics and I get the general gist of things (hmmm, we'll soon see anyway...), but what are some extra tips when it comes to the Brets? Those Pegasus Knights in particular.
Pegasus knights can be hard to deal with. The 20" fly movment is very handy for them. I find shooting them works best.
General tip is to force panic checks. If you force panic checks and units flee then you have bought your amry some breathing space.

The "A Smart Player Will..." theory is a complete paradox. If we make an assumption that everything we do is outsmarted, then theoretically we can never win.
One thing to keep in mind with pegasus knights is what units you can use to kill them. They only have a 3+ save, but they have T4 and 2 wounds. Treekin, Treemen, and dragon riders are excellent for the job. Wild riders in the flank are passable. Massed glade guard fire can do respectably at short range. Waywatcher fire at short range is better (killing blow is very nice here). Wardancers with either the extra attack dance on the charge or the killing blow dance can also do reasonably well. Dryads are a less good option but can do some damage.
Really, most of the wood elf army can make a dent in pegasus knights. Also, pegasus knights are expensive for the amount of damage they put out.
Personally, I'd keep combat units nearby my missile units (the likely targets of the peggies). That way when they charge your glade guard or what not you can either take the charge or flee and then countercharge with your real melee units.
Bretonnians can be tough for Wood Elves.
Some armies are fast - we are faster.

My biggest advice would be that nearly all of the time, the Bretonnian player will pray, thus giving you a guaranteed first turn. Use that knowledge to your advantage when deploying.
I have a speed list that of Welfs that has never had a single problem w/ brets. We are slightly faster and significantly more maneuverable than they are. Our fast cav (ie Glade Riders) will mow down any sort of peasants that they bring. Our warhawks are just as fast as their pegs and their pegs can't chase us if we initiate the combat. All of those w/ a machine gun alter lord will roll brets with no problems.
Put three woods down in a somewhat diagnol line w/ your two terrain pieces across from each other and your extra 6in wood in the middle of the table on your side to finish the diagnol. 2 lvl 2 mages, and a lvl 1 branch mage will allow you to move the woods at your discretion to close up holes and pound the knights if they decide to go into our house (aka woods).
2 groups of 6 waywatchers I have found to be insanely more useful than a treeman and the killing blow will have a great time w/ the knights.
Brets really are not a problem once you've gotten some games under your belt. I can understand the fear of them though - I feared them when I had just started as well. They truely are the one army Welfs should always beat (unless the jerk brings the RAF) due to the fact that we dictate when most combats will occur due to the movement of trees. I've been playing Welfs for close to 2 yrs now and haven't been beaten by Brets since my 3rd game against them. You'll learn! Tell us how the games go!

Brets truly are one trick ponies, they need to get the charge off to inflict damage to most things with their lance formation, if you can charge them on the flanks they have a hard time repelling or recovering from it, even if you charge them in the front you might still win as long as a is not a hero in the front rank
Also because most players make use of the lance formation their blocks tend to be long and akward to wheel around terrain or to try to catch units that go past them.
As I Bret player I really don't like playing Wood Elves.
There has been lots of good advice here.
WE are the only army that can consistently out-maneuver Brets. As already stated Waywatchers are a pain in the ar*e especially if they start behind or equal with our lines.
The biggest problems for Brets though are:
-Units that don't break on the charge
So obviously a Treeman (especially with a BSB nearby) is really difficult to get rid of. Wardancers with killing blow and treekin are great for counter charging.
Also, the obvious one is use trees...Long units of knights can get stuck in trees very easily, especially if you dump a forest right in front of them.
So there you go...hope that helps =)
1 other quick trickies thought I can give you ontop of my other post is to bring a small 5 man GG scout unit with banner of zenith (march blocking at 12 inches). This along w/ waywatchers at his lines could potentially march block everything come turn 2, if not turn 1 at parts of his line.
As to the deployment of the GG scouts I'd stick them 2 inches into the woods that you get to place in the center of the table on your side... then if/when you go first (praying happens 99% of the time w/ brets) treesing forwards and most of his line will be march blocked and can't see the guys blocking them to charge them!
As I said, and so did the bret player - Brets are no real issue to us Welfs. I like the bigger calv targets for my moveable archers.
