I usually face off against Witch Hunters with an occasional Chaos face-off thrown into the mix. Both lists are stacked with MEQs. Now for the first time I'll be facing off against the Tau, and I've put together a list that I think has a good shot.
I'm somewhat limited with the models I have right now, but this is by no means my entire range. More purchases are also impending! Any suggestions at all are quite welcome!

Archon - Punisher, T-Helm, Shadowfield, Drugs, Haywire Grenades, Plasma Grenades, Skyboard, Hell Mask - 161pts
10 Warriors - Splinter Cannon x 2, Shredder x 2, Sybarite upgrade, Agonizer, Drugs, Plasma Grenades - 159pts
10 Warriors - Dark Lance x 2, Sybarite upgrade, Vexantrope
5 Warriors - Raider, Splinter Cannon, Shredder
10 Wyches - Wych Weapons, Plasma Grenades, 2 Blasters, Raider, Succubus Upgrade, Agonizer, Drugs - 258pts
3 Reavers - Blaster x 2
3 Reavers - Blaster x 2
I feel a little light on the anti-tank side, but also expect few vehicles to show up.
HQ: Just a little too much uber killing power in 1000 points. Demote him to a drachon.
Elites: These are fine, but I would drop the combat drugs on the succubus.
Troops: What's with all the shredders? They're for tyranid hordes. Take some blasters.
The DL squad does not need a sybarite at all either. Give her to the 5 warriors in a raider. And the reaver jetbikes? You should only need one squad. Kit out your raider squad with the saved points.
Half-expected the Dracon comment. Consider him demoted. I also expected the same overkill sentiment from the wyches, but I'm happy to keep them as is.
Shredders - Yeah, ok. I like template weapons. Blasters are that much better, even against fragile(ish) troops?
the vexantrope/sybarite on the sniper squad I may keep just to see how it plays. I may be panicking here, but I'm scared to death of the cascading fire I'm about to receive.
Honestly, my bikes never do anything, so I'm not going to hesitate to drop a squad. Maybe drop both and add another sniper squad? My bikes are a large part of my anti-tank right now.
One more thing that I wanted to ask: Crisis Suits are not considered a vehicle/walker are they?

Crisis suits are just multiwound infantry, hit a group of em with dark lances and watch em drop. Of course getting the shots on those bouncing bastards can be a pain.
If he brings a big squad sic the wyches on them.
I'll give it a go - too recommend dropping the Archon to a Dracon (no "h" in the word Dracon) but I will refer to this unit as an Archon for reference sake.
I do not like: Skyboard, Haywires and masks
Skyboard - I would rather have a 12" charge than a 12" move. I do not fleet on a skyboard as I think its cheesy so a lord on foot that can fleet with a 12" charge is faster.
Haywires - Tau vehicles are skimmers which means you will need a "6" to plant the grenade. Also, some Tau players like to put anti-assault upgrades to their vehicles that will definitely hurt you. I really do not suggest assaulting Tau vehicles - its a waste and very ineffecient way of taking down a skimmer.
Masks - I am not a big mask fan of any kind. Against tau it may work with their low leadership but if my Archon/Dracon is in close combat I want them to charge me - I will strike first and on top of that thats one round the enemy isnt shooting! I would easily trade the mask for the trophy rack (leadership 10 would be easy to achieve!).
I would consider dropping the wych count to a total of 9 which would leave room for this guy on their raider. Pray for the random 12" drug with the wyches and hide them well.I too recommend dropping the shredders for blasters and dropping the drugs. With the extra points get more warriors into this squad - 16 total if possible. They are awesome in shooting and more resilient than you think.10 Warriors - Splinter Cannon x 2, Shredder x 2, Sybarite upgrade, Agonizer, Drugs, Plasma Grenades - 159ptsI know you like the mask but the chances of this group getting assaulted by Tau is like 100 to 1. This unit is usually left alone if they are not shot-up in the first turn and usually the opponent is targetting other threats - not these guys, definitely a waste. You have to remember that 10 warriors is nothing in scheme of the Dark Eldar list, they are a throw away squad that is good for popping 1 tank - who cares if you lose them? And against the tau the meager DE warrior is far superior to the firewarrior - better initiative and weapon skill is enough "defense" this squad deserves. I would take this sybarite, drop the mask and put him on the Raider Squad.10 Warriors - Dark Lance x 2, Sybarite upgrade, VexantropeWith this unit you are going to be pulling double duty - they will be both fire support and cc support because the Tau suck at CC. I would seriously consider dropping the shredder for a blaster and a horrorfex for the raider (the Tau's low leadership is ripe for pinning weapons!). Now with a sybarite (from the above squad) I would try to find points for an agoniser but a power weapon or poison blades would work fine. Use them as a supporting unit to the wyches or as a mobile fire base - they can almost assault on their own but I think the unit needs more men.5 Warriors - Raider, Splinter Cannon, ShredderDrop this unit down so the Archon can ride on it. 10 wyches is overkill against the tau but you already knew that. I really dont have a problem with them other than they usually kill off the tau in one round of combat. This can be a problem as a decent Tau player would bait you into assaulting a decoy (one that you will obviously win) and then prepare to rapid fire you to death. I would knock these ladies down to a total of 8 at the most.10 Wyches - Wych Weapons, Plasma Grenades, 2 Blasters, Raider, Succubus Upgrade, Agonizer, Drugs - 258ptsBikes scare people - these 2 units will usually be a first priority target and with all the Tau guns they could easily wipe them out and still have enough fire power to shoot everyone else. So you will have to be very careful how you use these guys. Hide them well, turbo when you are not going to shoot and hug cover like crazy. With crisis and stealth suits you will be hard pressed to be able to hide them good enough.3 Reavers - Blaster x 2

Another option would be to drop the bikes completely and take a squad of Warp Beasts and a Ravager with 2 disintegrators for the same exact amount of points. The beasts can act as counter-chargers for the foot slogging warriors and the ravager is a mobile fire base that is going to target skimmers (remember that shooting a skimmer is easier than assaulting one).
Now one other unit that is worth mentioning (but I know you dont have the points for) when playing Tau are mandrakes. This unit is perfect against this kind of enemy as it gaurantees you they will not get shot up and most likely get first charge. You should be able to reach any hiding tau fire-warriors and I have even used them to tie-up stealth suits. The downside is that usually tau hides in cover and the mandrakes would strike last.
Just my opinion - milage may vary and happy hunting!
I'm with Kwik on most of this, however there is something else I thought I'd add.
Wyches are really only necessary against Kroot. They're overkill against everything else in a Tau army. Against Crisis suits and the like, I'd say they're just a point sink. The sybarite/succubi will be doing most of the work in that situation, and the troops won't have enough attacks coming back at them for the added survivability of the wyches to matter. So if you plan to use them specifically to deal with Kroot, awesome. Otherwise, you'd probably do better with another raider squad.
Well, that's not entirely true. Haywire/Goblet wyches could really do a number on an unwise Tau general. Tau tend to use their skimmers to block your assaults and keep shooting at you through them. They expect the skimmers to survive an assault so they don't typically worry about them and leave them vulnerable. A bunch of haywires hitting 2/3 of the time has the potential to reverse the situation by turning a blocks movement but not LOS skimmer into blocks LOS but not movement wreckage to shield your advance. *Evil grin*
I really like the small jetbike units. My Tau opponent hates jetbikes passionately, and I use them specifically to put sweat on this brow and to distract him away from my more fragile and more damaging warriors. If they manage to take down a devilfish while doing so, even better, but they're really there to mess with his head.
I made the mistake of letting my footslogging squad get into CC w/ kroot. That ended badly. and then my Dracon AND my Wyches got tied up for a billion rounds with the crisis suits. My bad rolls aside, they die slow.
I agree with the Jetbikes. I just kept them away from his troops and would hit and run them in and out of LOS, popping blaster shots all the way. 95 points and they managed to occupy a commander, a broadside and some suits, killing some and protecting my flank. Not that it helped.
I'm going to post the list that I actually used later (i'm at work right now).

I think for the match I'm going to drop the raider squad, run an Archon and Dracon with an incubi retinue. I found that if my raider could see any Tau units, many of them could see and fire back with enough firepower to down my transport easily.
