So I'm new to orks, having just gotten back into 40k and 5th edition recently with AoBR. My initial force, after 2 AoBR boxes and some more boyz, is shaping up something like the following:
HQ: Warboss (1#, x Pts)
Power Klaw; Attack Squig; Cybork Body
HQ: Weirdboy (1#, x Pts) Warphead
2x Troops: Boyz (18#, x Pts)
1 Boyz Nob
Power Klaw; Bosspole
Troops: Boyz (21#, x Pts)
20 Boyz @ x Pts
shootas; Big Shoota (x2);
1 Boyz Nob Power Klaw; Bosspole
Fast Attack: Deffkoptas (5#, x Pts)
5 Deffkoptas TL rokkits
I've (obviously) got some nobz from AoBR as well but I don't know that I'd have a place for a nobz unit.
It's time to be thinking about rounding out this force up to 1500 or so, and I'm not totally sure where I should go. I don't think I want to go with a bunch of trukks or wagons. I have a mech Eldar army already so I'm looking more at a footslogging force with a good amount of bodies.
The next immediate purchase I'm looking at is either a unit of nob bikers (5 or 6 I guess?) or some kommandoes (probably 10 with a couple burnas and possibly the special character to go with them, dropping one of my current HQs). Both units would help me with adding some speed and/or getting some positional advantages while my mass of slow-moving boyz trudges across the field. I'm sure to add even more boyz eventually, of course, but it seems that an army needs more than just boyz. I also happen to really like the models for both bikers and kommandoes, so there is that element.
Between Kommandoes or Nob bikers, what seems best? In addition to (or instead of) those units where could I go from here? Anything I should change or remove from my current force? Kanz would seem decent, a grot screen would be useful (though I wouldn't look forward to painting a huge unit of them), and I know Lootas are widely considered a superior unit. I'm not shooting for a tournament-worthy army but I do like to win.

Your list needs a fast troop. In missions where you have to claim distant objectives (especially the one where there's only one objective on the other side of the table), you need a way of reaching them besides walking, which can be very difficult, and if it's the 'dawn of war' setup, it may very well be impossible in larger games. I'd either get a unit of trukkboyz, a unit of nobz in a trukk, or nob bikers.
If you're not going to use nobz, I'd replace the warboss with a big mek w/kustom force field. You should also consider getting more boyz, to fill the units up to 30 each.
After that, lootas would be the best investment. Units of 9-13 are devastating. I'm not a big fan of burnas, so I'd use the burna parts to convert normal boyz (or use the parts from a box of boyz) into more lootas. That's what I did, and they look pretty good, especially if you use shoota boyz as the base model, and add on burna bits from there.
Since I really like the looks and idea of a nob biker unit, should I think about getting a warboss on a bike as well, or is that just overkill?
Since I'm sticking with a warboss to get troop nob bikers, should I stick with a weirdboy as a 2nd HQ or switch it to a big mek w/KFF? I see advantages to either route (multiple waaghs/fun randomness vs. always useful but less fun cover saves for all).

I still want the kommandos to be worthwhile, though, and may end up grabbing some if only to paint them up.
I know it's a copout answer, but it's really up to you if you want a KFF or Warp 'ead. The KFF will keep your boyz alive, but the warp 'ead will provide valuable anti-armor. I'd personally go with the KFF, but that's just a personal preference.
With this list, a warboss probably isn't going to do much good anywhere else, so I'd go ahead and put him with the nob bikers. This is how I usually run nob bikers by the way:
6-8 nob bikers with 2-3 powerklaws, painboy upgrade, cybork, waugh banner, bosspole
I'd definitely give the unit all these things if you want them to make back their points. If you're including a warboss, you could go as low as 5, it's up to you.
Again, the best thing you could probably do is get more boyz. Those units are looking a little light. In any case, I'd increase at least one of the units to 30, and make that the unit you attatch the KFF/Warp 'ead to.
Oh yeah, I'm definitely adding more boyz, that is a given =) I just want to start branching out in my modeling and painting in the near future.
I'll probably grab a big mek and test that out too, see what I like best.
I realize the rest of the army is dirt cheap, but a unit on the high side of 6-8 outfitted appropriately still seems like a lot of points to stick in one place (and this is coming from an Eldar player). That loadout is exactly what I was going to go with, though, so I'm glad to see my first thoughts are in the right neighborhood.
