Hi, I was recently in a car accident (I'm fine, car's not.), and all of my beautiful, beautiful Tau are destroyed. So I thought, hey, this might be the perfect time to try a new army! And as I've always had an infatuation with the eldar, I figured I'd try them out.

Pretty sure my tactics are clear just looking at my list. Wave serpents for additional anti-tank, as I"m a little light in that department, pathfinders are campers with the bright lance a mobile pie-dropper. Avengers last minute objective grabbers, and the Farseer traveling with one of them. Of course they'll drop out to unleash bladestorm.
So, thoughts? I'll be adding aspect elites in the 1250, 1500+ range, but with how objective oriented 5th is, I thought lots of troops would serve me well.

i actually switched out 4 pathfinders for another doomseer, so I can have one with each DA squad, since it takes off 96 points and that's a bit much to add to a single farseer. The fire prism is kind of reminiscent of my railguns... I miss them.
Ah yes that's a much better idea. Like I said, Prisms kick ass, they just become their best with 2 or 3.
Looks like a very solid base to build on, but I would also advocate dropping the pathfinders down to 5. Also beware of CC, since you have no CC units, anything that gets caught is pretty much toast. I would recommend a second prism, mainly because they get a lot of hate and get targeted early on, and because twin linking them is fantastic for dropping the MEQ pie plate of doom.
Yeah if Eldar gets charged, it's because you let it, or they annihilated your transports. Luckily Eldar transports are hardy.

Your list looks like a solid one, close to most other lists I see here regularly, and fairly competitive. You also have some great options for increasing it to 1500 and 1750 points later. I personally am not a big fan of Dire Avengers even though they are a great choice, they just don't really suit my play style. I think your choice of dropping a few Pathfinders for another Doomseer is sound.
For later purchase I would recommend two more Fire Prisms and a Wave Serpent with a full compliment of Banshees. Which will bring you to roughly 1500 points. And after that a small group of Fire Dragons and another Wave Serpent to top you off at 1750-ish. Or you can do the opposite with the Banshees and Dragons, but this will leave you at around 1400 points without the ladies and their transport.
Others might drop one group of Dire Avengers for either the Banshees or the Dragons, but I think your choice is better. You'll have more use for the extra troop choice in 5th Edition, and they are effective enough against most things you will face at that point range.
Pretty much the only thing you need worry about is Necrons fielding that ungodly Monolith in a game where they shouldn't be fielding it (it's too pricey for 1000 points really). But even if you do face one I think you will have a decent chance of knocking out enough basic troops to cause him to phase out before the Monolith gets to do anything.
Hrrm, I'm thinking of having the other farseer be a guideseer, that way I get a bit more of a bonus if they both attack the same target, which I see being likely if my Tau expereince is relevent. Thoughts?
I'd stick with Doom. You already hit on 3's and nothing can mess with that. A lot of the time you'll be wounding on 4 or 5+, so you need that re-roll. It's most statistically useful than Guide for DA's.
