Ive just picked up one of the old battleforce boxes (1 fex, 16 gaunts, 3 warriors) and was wondering whether it was possible to create a decent 1k list from it - alongside buying a few extras?

No. You will never -- should never -- run a single list containing even three of those Troops selections. At most you can use two of them ... but then you'll need more of each. Like as much as four times more.
Say you make a list that requires Warriors and hormagaunts. 3 Warriors aren't enough. You'll need at least 6 so you can have two such units. And you can't even make a legal Troops option out of just 8 hormagaunts (or termagants). In any case, you'll want something like 2 units of 14-16 models in each unit.
Sadly, the Tyranid battleforces -- both 4e and newer 5e -- don't actually give you a good core to build any solid army list. It's too much grab bag and no focus. If you intend to have a big 'nid collection and run multiple army lists, then it can be an OK deal. But outside of that, they're useless and you should just buy the individual model kits required to make your specific list. Otherwise you're inevitably wasting money on units you just won't use.

but, you can make a tervigon form the fex, and by buying an extra 2 boxes (gaunts and warriors) you can make a nice starter list
