If I'm making a gaunt horde list, about what percentage of the list should be gaunts, and what percentage synapse?
Until I could tweak the list I would plan 1 synapse for every two gaunt broods. Except for HT, which are generally tough. So an HT could control 3 broods. Haven't tried it, but if I was going to design a list this is how I would approach it.

You want a 1:1 or 2:1 ratio for soft synapse to creatures needing synapse.
Soft synapse is stuff like: Small warrior squads, lone synaptic zoanthropes, winged warriors
Hard Synapse has a 3:1 rating tho, for gentlemen like tyrants, large warrior squads, broodlords with genestealer retinues (and carapace). Two gropos tyrants with retinues (while expensive) can attend to about 4-5 gaunt squads.
You need to keep in mind though...
1.) Can my synapse keep up with my gaunts. Winged or leaping warriors are commonly used with hormagaunts as with a 6 inch move, fleet and a 12 inch assault, thats potentially 24 inches of movement in one round out of the gaunts, and that puts them beyond the tyrant's synaptic web.
2.) The enemy will take every chance he can get to murder your soft synapse.
3.) Don't think individuals. Think web. You want an interlinking redundant synaptic network. If the enemy knows that he can knock out your gaunts for a turn by shooting taht zoanthrope, by thunder he'll outright erradicate it. If the enemy knows you've got warriors and a tyrant overlapping them, he's more likely to shoot at the harder synaptic targets or (lets all hope) the gaunts themselves.
Do NOT skimp on the synapse. I have had nearly 200 pts. of my army run off the board once. I would recommend having at least a 1-1 ratio. You can have huge gaunt broods and tiny synapse broods, but make sure there is enough synapse to go around. Another thing to do is watch how you set up. A good way to prevent the dispersion of our gaunts is to have 1 synapse brood between each gaunts brood (so each synapse creature is giving synapse to 2 gaunts broods and each gaunt brood has two broods giving it synapse). Like this (S for synapse, G for gaunt):
