I recently purchased my Eldar army (whcih still has te be delivered). I was wondering if it is possible to build an army of only vehicles and how it should look. So an army consisting only of jetbikes, vypers, warwalkers and grav tanks.

What your talking about is a mech army they userly contain lots of jet bikes a few vipers and tanks the also have there hq such as there farseer and autach mounted on a jet bike.
I am fairly noob to elder so i cant tell you the relative merits of such an army but I guaranty you there will be a lot of people here who can.
oh lord loadfs of people, in different types, my son uses Bril Tann, all falcons and serpents but often throws spider, scorpions, harleys and reapers in there
I have siam hann, all bikes and vypers with 1 falcons (old codex craftworld) and a maiden worlds army which is all bikes, walkers and vypers

By "look" are you asking for painting advice or army composition advice?
Also by all vehicle are you saying you don't want to use footsloggers mounted up in a serpent?
If so Maybe consider a very mobile long range force. Something to make slower assault armies cry due to lack of things to charge.
This would use jetbike units, prisms, falcons, and vypers with longer range weapons.
If your plan is to make a vehicle list, then you should probably aim for about 4-6 big skimmers like waveserpens, prisms and falcons in a standard 1500 point list and some vypers. You need to have a good number of them on the table to make it impossible for the opponent to stop them all. 5 eldar skimmers with assorted upgrades plus vypers are quite a handfull for most armies out there. Few have the firepower to effectively suppress that many skimmers and fewer still have the speed to match them.

I love my mech Eldar. Everything is mounted in a wave serpent/falcon, and my opponents just dread it. It's also a lot of fun to play with.
And, just in case you're not fully satisfied with heavy support choices for a mech army, you can also dig into another source : Forge World (and now Apocalypse) flyers...
Very costly (in £, $ or €, AND in GW points !). But the Nightwing is a really nice model...

Hey, 28 Falcons filled with Harlies and Dragons>Baneblades, anyday. I love my Falcons, they just never die. My friend found out today.
Anyway, back on topic. Mech Armies depend, as some like Bikes, some Serpents, and others..well I really don't know about those. They are really fun and you should definitly give them a chance.
Don't forget that despite what we tell the mon-keigh the falcons are not indestructable. Let them get ripped into by enough plasma or shot up in the rear and you will start losing them.
Where they get their fearsome reputation(and serpents too) is that it takes different tactics to take one down than other hard to kill vehicles. Normally what you're looking for is single high power attacks. You want to land an earthshaker shell or a railgun hit on that land raider not sprinkle it with autocannon fire. But the Eldar vehicles a different. The railgun or earthshaker hit is just a missle launcher to the serpent and while they're all but guaranteed to shake the falcon on they only have like a 10% chance at taking it down. But our craft fall to rapid fire plasma weapons and autocannons.
This is important for you to remember when selecting targets.
