Yes those Immortals need the protection!
No way! You shouldn't pay that much to protect 5-10 models from something they might not need!
The flying circus is horrible, spend your points elsewhere.

Hey guys just need some input on whether or not I should put a res orb with my Flying Circus of Immortals in 1000-2000 point games. If I take it out the extra 40 points could free up alot of extra options I could take such as scarabs warriors, and other wargear I could take with the Lord such as Gaze of Flame.

I voted for option 3!
Waste of points. Gaze of Flame is much cheaper and it provides more protection to your Immortals from the real threat: Assault.
Flying Circus isn't that great, but the ONLY thing it has to gain from the orb is a save against str 10 shooting, and how much of that is flying around?
I voted option 2, I have contemplated slogging immortals in 2 squads of 5, but losing all that mobility is just sad. Many games I'll strike to one end and destroy something (squad, glance a vehicle, whatever), then find I need more support on the other side. Having both range with my destroyers AND my Immortals grants me shooting ranges of almost all the table at a given time. I understand the deep strike is dangerous, just don't be so agressive and land near models/buildings.
It's not an amazing squad, but I can't bring myself to stop fielding them as a circus! However, T5 will survive most, even assault so I opt to use 40 more points elsewhere! Again, avoid CC units (you've got 24" of range, why would you land RIGHT next to em!)

Is it alright that you don't field 10 Immortals and instead opt for a smaller squad size say 5-8?
I'm pretty convinced on rolling with no res orb now however though
I think Immortals are resilient enough not to need it, but I also get 10 Immortals so that makes it more so. Add to that the added cost and I chose (and choose in my armies) to not get one.
Well here's my decided 1000 point army list although its subject to some change
5 Scarab Swarms
Has a little bit of everything, pretty balanced IMO but the only thing I worry about is my Immortal Squad. Taking out the res orb freed me up 40 points for 3 Scarabs so thats cool.
Ahh I wanna keep the circus rather than opt for more destroyers becase IMO it just gives your army more varitety and ultimately makes it more fun to play. Plus I'm not going into any tournies any time soon so I don't need to go all out destroyers or anything.
But back to the topic ummm yeah I guess if your carefull with your deeptriking you won't need a resorb
