Tried my first hand at converting and using green stuff today, pretty much made a black reach nob into a painboy as best as I could, I'm proud of most of it except maybe the apron (empire knight cape) and the green stuffed face mask. Any comments, advice, feedback and especially criticisms are welcome.
give me 1000 men crazy enough to conquer hell, and we will do it
consider the predator
let your soul be armoured with faith driven on the tracks of
obdience which will overcome all obstacles
and armed with the great guns of zeal, duty, and purity
That's a great start, it looks very Dokky.
I'd actually leave the cape off, it looks kinda weird. The mask can be slimmed down by trimming away excess stuff.
And for some suggestions, try making those bullets look more like pills or needles to reinforce the image. Also, maybe consider giving him a big Orky steffoscope (made from random cutty bits and a bomb) to help show him off as a true medical professionork.

I agree with the cape suggestion - my first usage of green stuff is to make skirts/belts and such and I think you can make something better than that cape if you want your dok to go that route.
Someone suggested to me using guass cloth from a first aid kit and either using pva glue or green stuff to make it solid to get a good made from scratch cloth thing. Not sure exactly, as my conversion experience is limited, but seems like a good idea.
