Roll 1d6. If you rolled a 4+, you're fine. But on a 1-3, your opponent will field as many Carnifexes in every battle - even in 500 point battles.
Thats what it feels like when I play against one of my friends. 50% of the time he plays a well balanced, well planned list. The rest of the time he fields 3x 2+ save Carnifexes and 3x T7, 2+ save, regenerating carnifexes, and fills in the rest of his army with fast moving gaunts. He knows I only have two turns to shoot at his Fexes before my army is bogged down in close combat. Even with PK nobz galore, I'll be hard pressed to kill a whole six fexes once they reach my lines. He also knows I don't currently have the models to combat his Fexes properly. Simply put, he always has and always will like to field more cheese than you can fit in a hot dog bun. What can I do?
How many can he field in 500 points? Fexes can only be elite in games of 1500 points or more.
PK Nobs are your best bet against these beasts, failing that KMB Kanz can do some damage at range and in combat.
First of all, he can only field 6 carnies in 1500 pts or higher. So, smack him with his own codex if he tries to field elite fexes in anything lower.
Secondly, seriously just charge (the lower T ones at least). With S4 attacks on the charge and superior initiate and WS a mob of boyz can truly wreck a fex, even without the help of a PK.
Also, if he takes 6 fexes, there are no zoeys in his army, so maybe drop some looted wagons, killa kans or deff dreads in. Any of those will wreck some parts of a nid army. Kans and dreads will mop up hordes of gaunts and do well against fexes. Looted wagon + boomgun = lots of dead gaunts.
Also, rokkit buggies and/or deff koptas. Lootas, of course.
Similarly, 6 fexes means almost nothing else sometimes. And if he's taking 2 tyrants, he'll be hard pressed to fit a lot of other things in his army. So, out nid him. Swamp him wiith large numbers of your superior troops.

I apologize, I did not intend to imply that he fields six in a 500 point list - he does play by the rules.
I've given this some consideration and have decided I really have nothing to worry about. I think I'm just experiencing some post-Eldar-horror-story-stress-disorder.
A proper mix of Lootas and KMB Koptas should do the trick.
Come to think of it, the only reason I was upset about his fexes was due to a previous loss which was only my second game wit da Orkses, coupled with past frustrations, and compounded by a couple of exceptional dice rolls on his behalf last game. Upon reflection, the last game, the one which prompted me to post a plea for help, could have easily gone my way - it was just one of those breaks from the Great Statistical Mean.
Oh, speaking of KMB Koptas, any suggestions on kunvertin AoBR rokkit koptas into KMBs?
You could get the kmb from the burna/loota box... But seriously dude, don't even worry about kmb!! they aren't twinlinked and have only one shot!!! TL rokkits or bigshootas for the smaller ones, (even try out the big bomm), but NO KMB. They aren't worth the points, they should reduce the cost of the opta when you take the kmb...lol
KMB on a Kopta? BS2 and gets hot is a no go ==My== friend. KMBs go on Kanz for the BS3, Koptaz should stick with cheaper (and twin-linked) rokkits or big shootas.
Personally, I only use big shootas on the deffkoptas, and I always outflank with them. Anything else is too expensive, and the big shootas are pretty good against back armor.
For kmbs, I use killa kans. They've got good aim, and if they get assaulted, they strike back with strength 10. Deff dreads aren't bad, but they're a little more expensive, and their aim isn't as good.
Powerklaws are still your best bet though. Try some nobz/biker nobz and tear them apart.
I wouldn't be so sure about Nobs against a Carnifex. He will insta splat with every wound and all you've got is a cybork body, they will squish it with their PKs afterwards but you'll end up breaking even pointswise. Nobs would be a last resort, same with the Warboss, Boyz can handle it.
It comes down to either speed or efficiency. A team of nobz will wipe out a carnifex in short order, one turn or at the most two, but will take quite a few casualties doing it. The single powerklaw buried in the mass of boyz will lose far less in the way of points, but it could easily take 3-4 turns finishing the carnifex off.
If you have a large unit of boyz for every carnifex on the board, then use the boyz, but if you can't afford to spend the whole game locked in close combat, like in an objective based mission, then the nobz will do the job much more quickly.
wait I just answered my own question. Bikes and Jetbikes are not under the "vehicles" section of the rule book and the stat layout included armor for all things considered "vehicles". Man, that is so sad about KMBs and deffkoptas, it pretty much makes that a useless option.
