I love the recent Ork Biker models and hope to add some to my army, however there is one thing that troubles me about taking a squad of 6 Ork Bikers and that is their poor leadership of 7 so can someone please answer this question...'How do small squads of Orks such as Bikers and Deff-Koptas deal with leadership?'

I couldn't think of anything funny, smart, or witty to say, so I said this.
Deffkoptas just don't deal well with leadership which is why you should either take them in a unit of 1 or a unit of 5 (it will take 4 wounds/2 deaths to cause a morale test). Anything less and you're just asking to fail a morale test and have them flee off the table edge.
Also, deffkoptas really aren't made to deal with close combat problems like bikers. They are more of a support unit for tank hunting with twin-linked rokkets, outflanking light units with twin-linked big shootas, or supporting a squad of boyz in close combat.
Also consider: Only throw them into winning combats / combats that could become winning with their support. If you always inflict more wounds than the opponent, they'll never have to test LD
You pass 100% of the leadership tests you don't take.
In other words, the best way to avoid failing leadership tests (besides the mandatory bosspole) is to keep them out of danger during the shooting phase, and then only start fights you're going to win.
Also, never have nob bikers and regular boyz fight in the same close combat. The casualties in the boyz unit will count against the nob bikers, and unlike the large units of boyz, the nobz are not fearless.
It's also important to have the nob bikers start assaulting the enemy at the same time the rest of your army does. This is why nob bikers work well in speed freaks armies, but not footslogging ones. If the nob bikers arrive at the enemy lines 2 turns before the rest of your army, your opponent will be able to focus exclusively upon them. If trukks/battlewagons are right behind the bikes, then you'll do fine.
With a bosspole you have about an 84% chance of passing a panic check in the shooting phase, which is pretty good. The real trick is to avoid losing close combats, and the best way to do that is to avoid massed power weapons, powerfists/klaws, and genestealers.

Only one thing I'd like to point out. Just because your boys aren't mounted in Trukks doesn't mean your Nob Bikers will be ineffective. Likewise, just because you have Nob Bikers doesn't mean you have to assault with them right away.
You can position them, keeping them at range, and unload your dakka guns while they wait for the rest of the boyz to finish footslogging.
I don't know why anybody would assault immediately with such a powerful shooty squad as their disposal!
I think the best way to not have to worry about biker and/or kopta leadership problems is to not take those units in your lists.
