I don't exactly get how to use grenades while playing, can someone clear up the subject for me? Especailly with all the different types of grenades the Eldar have
So what kind of grenades do we have? Let's see...
Plasma grenades - Basically they allow you to attack enemies in cover without any penalties. The penalties for attacking someone in cover is requiring to roll a difficult/dangerous terrain test and having your initiative lowered to 1 for the first round of assault. Can also be used against Vehicles.
Haywire Grenades - These are fancy pants anti-tank grenades. You roll to hit as normal with a single die for each model with one and roll a single die for each hit. the results for the damage table are under the Swooping Hawk entry.
Melta Bombs - More anti-tank grenades. Resolve hits first with a single die for each model, then roll 2d6+8 for each hit.
Swooping Hawk Grenade - Used as you arrive from Deep Strike. Place the Large blast template anywhere you like on an enemy model then roll D6 for Scatter. Can be used anywhere on the board.

Cool, but when do I use the grenades? Shooting phase right? And just declare plasma grenades when charging in assault phase right?

Actually that's the one phase you don't use any of them.
Swooping hawk grenades aren't like any other grenades in the game. They probably should have called them "bomblets" or something to avoid the confusion. You use them when they deep strike in.
With all the other grenades you either use them to
A. Strap onto vehicles in the hopes of blowing them up (haywire, melta, plasma)
B. Use them to help in assaults. But this only changes how the assault rules play out. You don't get any kills from the grenades blowing someone up (plasma)

The only other weird grenade I can think of in the game is the Tau grenade that messes with you trying to assault their models. But again these grenades just change the rules for assaulting, their grenades aren't going to kill any of your guys.
Yup Sunnyside her nailed it right on the head. Since we're talking about grenades and the Tau's own ones, might as well mention them as well. They have EMP Grenades and Photon Grenades
EMP Grenades - Much like our Haywire Grenades but not as good. Roll to hit as normal. On Damage rolls 4 or 5 is a Glance, 6 is a Penetrating hit.
Photon Grenades - Negate the bonus attack for charging. Can be a bit annoying.
