Missile Spam list is a personal favorite. I've seen 15 Deathrains hit the field at a time (You can do 19 in a Farsight list), and they can dance around and target what they need to at any given time. THAT many shots will make very short work out of any MCs, light/medium armor, or infantry with 4+ or worse saves. For added fun, just add Warfish SMS while they carry around your FWs. And SMS on railheads. Having no weapon in your army at less than 24" range can REALLY ruin some people's days.

I would have to say that the "cheeziest" Tau list I've come across so far was in a tournament. A guy I know fielded what he calls, "Air Cavalry Tau."
Shas'El with AFB/CIB
4 Warfish with 6 Firewarriors in each. (he states that he essentially thinks of them as a 60-point upgrade to make Devilfish scoring units)
3 Hammerheads with Railguns
1 2-unit squadron of Fusion Piranhas
1 2-unit squadron of Burst Piranhas
That was an incredible pain to fight, and, though I made it cost him (the tournament was Roster-based and I took out some stuff that would hurt him later on), I was quite soundly defeated. Smart Missile Systems make JSJ nearly useless for anything other than hiding from Railguns. Then again, even he admitted it was a cheezy list.
There is no such thing as a cheesy list. If a list follows the rules and codex allowances for force organisation then it is fine.
Anyone who calls a list cheesy does it for one reason and one reason alone 'they lose to it'. If you cannot win against a list then just accept it or try to create a list that has a better chance. NO LIST or ARMY is unbeatable (capitals for emphasis).
True the Tau have been reduced in effectiveness in 5th but I see this as a challenge. I get more annoyed when perfectly good units get nerfed by badly conceived and badly executed rules updates then by codex releases which greatly increase an armies effectiveness.
After all if Tau get an update that makes them more powerful who on the Tau forum is going to complain? and how many other army players will inevitably shout ‘cheeeeeeeeeessssseeeeeeeeeeeeeeee’?
So basically no Tau list that follows the codex force organisation rules will ever be cheesy. Some will be more effective but that does not make them cheesy. If anyone calls your list cheesy poke them in the eye and then run away and hide in a cupboard.
