What's best number of units in a warbiker squads? 11 boyz on warbikes with a nob or smaller groups? I'm thinking about bike lists with a squad of 6 or 7 nob bikers in a squad and another unit of regular warbikers with a nob and warboss on bike attached, but not sure if I should max out that squad or not.
I believe the maximum unit size is 10, so I don't think 11 is possible. In any case, I'd never use a unit that large. They work better in small, expendable groups, supercharging up the board and then either hunting armor with its powerklaw, picking on vulnerable enemies with shooting and/or assault, and joining close combats already in progress, to help tip the odds in your favor.
I always use units of 5-6 with a nob, powerklaw, and bosspole. For some added punch, you could always attach a warboss with a bike, powerklaw, cybork, and combi-skorcha as well, to add a lot of punch.
Nob bikers work best the following way, and I generally don't attach a warboss (they're powerful enough without one, I attach the warboss to boyz or regular warbikes instead):
6-7 Nob bikers w/2-3 powerklaws, painboy, cybork, waaaaugh banner, bosspole, and 1-3 combi-scorchas.
Any larger, and it's just overkill.

just checked my codex, unit size is 3-12.
I use units between 5-8 usually as more squads means more PKs.
Bikers are awesome at shooting, just make sure you check the FAQ to get the correct stats for their dakkaguns as the summary page is wrong.

thanks for the tips. and yeah i thought it was a max squad size of 12, which is why I was asking of 11+nob was the way to go. doing 2 smaller units sounds like a better play though. appreciate the advice.

I run a 6 ork warbike mob (Nob w/ PK, Bosspole) and send it up a flank with a trukk or some deffcoptas and a skorcha trakk. They have proved to be extremely effective so far; their shooting is excellent.

Bear in mind that using them just as a nob delivery system works, but is not the best use of them: they're a great distraction unit. In particular, their very decent firepower allows you to finish off some dangerous enemy unit, the nob w/ PK can prove to be a danger to anything, and yes, they can join CCs. But at 4x the price of an ork and the same CC ability, you're better off shooting!
3 is just too small to be effective, 10 means a unit that's far too large.
