The Tau are a tough race for the Orks because they're the opposite of the Orks in key stats. They're not tough and good shooters while orks are poor shooters and tough. Their biggest weakness is hand to hand while their biggest strength is their mobile nature and the level of difficulty in taking out their tanks. So the boyz have to figure out how to get there and take'em out before getting shot to bitz. Terrain ControlTried and True Looted Basilisk
Every Tau player will be looking to establish terrain so that they have something to hide behind while you have to come through a big open spot to get in touch with him. You have to take that away. When laying out terrain place things near the center of the long edge of the rectangle.(if you're playing 4x6 of course) They'll undoubtedly be trying to put things in the corners so that they've got something to hide behind and shoot you while you have to cross as much distance as possible. You have to create less distance. Don't think in terms of hiding your vehicles in turn 1 (thats what you bring the force fields and bike screens for) but think of taking shots away from him so you get there in turn two and overwhelm them. I'm speaking in terms of cross the board scenarios but if the scenario and setup gives you a chance for a quick strike first turn attack do always take it.
I promise you that every Tau player hates to see you roll those bikes out there. You always want at least 2 squads of bikes with nobz. They're mean and they can't be stopped before doing some serious damage. If playing Kult of Speed I always use bike command squads because they can't be disembarked on the wrong side of the battlefield like trukks. Big Shootas really eat through their infantry and can punch through the rear of their tanks if given a shot. Remember that Tau tanks and transports are skimmers which makes them hard to destroy.
The Basilisk is my favorite tool when dealing with any battle plan. Its an X factor because it scatters 66% of the time but it comes through and it scares the hell out of everyone you face. They want to destroy it, they fixate on it and they have to do it while dealing with a whole lot of green coming across the board quickly if you play Kult of Speed. This beastie is particularly good against Tau Firewarrior or Kroot squads.
Kustom Force Fields, grots and making vehicles harder to destroy
As with any shooting army they have a really hard time when you start using force fields to keep your vehicles hull down. What I do is run a unit of burna boyz + mek and a Big Mek + bodyguard both with force fields along side of two or three units of trukk boyz. You have to keep your vehicles close together to utilize the effects but its worth it. Run them behind your bike screens and you're looking at alot harder to explode vehicles. Don't forget grot riggers. 2 points and you can re-mobilize vehicles. Well worth it.
Multiple Engagements Due to the weak nature of the Tau in hand to hand I notice that alot of Tau players like to keep units close together to counter fire if you get to charge. You charge and destroy a unit and they rapid fire your ass with the unit next to them. For this reason if possible you want to be able to assault 2 units at once with the same unit and if not then attempt to engage both units at the same time with multiple units. Otherwise you need to try not to break a unit and hope to resolve a combat in the bottom of your opponents turn to allow yourself some room.
Warhammer 40K Tau Ads: The Storm Boyz + Gun Trukk approach
An interesting tactic I've seen used with a great degree of success by a friend. Run a bunch of guntrukks in front of a unit of storm boyz so they can't shoot the unit behind the vehicles. This is an effective screen against most any army.

I'd recomend Deffkopters, we've all got them from Black reach and there very effective against tau.
-You got your scout move, in which you turbo boost right next to them.
-The you can either assault and pin down something good like Broadsides or Crysis suits.
-Also, Tau players often waste lots of time shooting at them cos they fear the twin linked Rokits, which actualy aren't that effective anyway.
To sumeries, get them n combat as soon as possible and tie up his battle suits or whatever you choose. Let them soak up his fire that would otherwise be killing all your other units. Works for me anyway.
dont forget that looters can out range most of a tau army and glance the hammerhead..
they can be a great help in winning this match up.
