How many Scarab Swarms can a single Tomb Spyder produce in a single turn....
Also, After the Tomb Spyder produces Scarab Swarms, does he count as being in a unit for shooting purposes or can he still be singled out?
One per turn.
Yes, they form a unit together. This means that with 1 Scarab Swarm, the enemy will still need to wound vs T6. With 2 Scarab Swarms, the enemy will now need to wound vs T3. See Majority Toughness rules in the Rulebook for more info.
The Tomb Spyder cannot be singled out, you may choose which model to allocate wounds to, as normal with units containing models with different stats. This is great, because it allows you to use the Scarab Swarm as additional sacrificial wounds for the TS. Just be aware of things like S6 weapons causing 'instant death'.
I beleive that with one scarab swarm, the enemy only needs to wound vs toughness 3 when shooting. 3 wounds of t3 vs 2 woulds of t6..no?
It's based off the number of bases, not number of wounds.

Yes, Dark Trainer is correct is this circumstance. The specific RAW can be found on page 19 of the BrB, in which case the wording can be found to be the following:
"To keep things simple, roll to wound ising the Toughness characteristic that is in the majority in the target unit. If no majority exists, use the highest value in the unit."
This refers to the number of bases that are in the unit, rather than the number os wounds, which has already been established.
As to the OP, I fin the writing yet again a little vague, however I am willing to go with what has written by the other posters and say that only a single Scarab Swarm base is able to be produced through the Tomb Spyder's Artificer special rule.
