Do you know what kind of army the other guy is playing? I play Orc-guys fairly frequently, but they have sub-par armies, in other words, massed boys with nobs/powerclaws. My Eldar utterly destoy them with their mobility, but my Tyranids just can't seem to beat them reliably. So in this case a casual/crappy list is actually harder to beat than a competetive one due to the nature of Tyranids.

Some things to consider though is that one-on-one they will kick your behind most of the time, and of they get the charge they will destroy you. So try to split up his forces and destroy the individual parts utterly (there's no kill like an overkill). Remember the No Retreat rule, it will be vital to both you and him (most orcs are fearless in groups of 11 or more). Smaller groups tend to fold fairly fast once they start taking leadership tests, this can be effective against Lootas which can lay down the hurt on your MC's. Template and Blast weapons are nice, I always take Barbed Stranglers and the Stranglethorn Cannon, although if I faced mech-Orks that probably wouldn't be the only thing I took. If he uses lots of Trukks Hive Guard will kick butt, and if he uses Battlewagons Zoans or MC's are key. An outflanking unit of Hormagaunts can lay down the hurt in the back-field if he rushes forward blindly(use Hive Commander to give them outflank).

I'm out of ideas without knowing what you are facing, sorry, it's nothing really concrete but it should get you started.

On the topic to beat orcs i personally love this tactic
2 or 3 dakkafexes in pods.
In a single turn of shooting between the 3 of them thats like 36 shots str 5.... sheer overkill for orcs.
Bring in genestealers and put those puny close combat monster in their place with some stealer overkill.
And final note destroy their vehicles and they are easy prey.

    str 6 brah

alternatively, 20 termagants with devourers and a spore pod would be a decent alternative too, in place of the carnifexes
