I have just noted that Spirit Seers are independant characters.

This would mean that, in escalation games, they cannot deploy as part of a mounted Wraithguard unit. In the event that infantry are in reserves, the same applies to Wraithguard on foot.

Seems a little strange. Am I mistaken?

IC's can be deployed in the Transport with the Wraithguard, as they can be attached to the unit...if that's not good enough for you, though, then in your movement phase just say they attached, then put them in the transport and go. Won't make much of a difference, just moving models a little more.

I think my problem may stem from from different versions of the Craftworld Codex. I have gathered that in later printings, it is clearly stated Spirit Seers can (must) be attached to Wraithguard units.

Correct. In the msot up-to-date Craftworld Codex, Spiritseers are not Independent Characters, and must be attached to a Wraithguard unit. Other units eligble for Warlocks still only get Warlocks, they don't get Spiritseers.
