I have recently started Tau, so I needed to know which of these I should take, as they both look pretty lethal.
It relies heavily on your opponents. Against I.G or Space Marines NEVER take Broadsides, they get eaten alive by Lascannons, even with drone or shield protection. Hammerheads have awesome survivability, better so than a Land Raider. I'd almost be tempted to say they have more survivability than the Monolith. In fact I can see no situation where I would take Broadsides anyway, against horde armies that dont have anything like a Lascannon (say, Tyranids and Orks) the Hammerhead is still better as it is practically indestuctable and the pie plate of the Railgun will also be a lot more effective than Broadsides solid shots.
why do hammerheads have such a high survivability probability? everytime I see one its either blown up or about to be. Am i missing a special rule?

Hammerhead moves 12", still can fire all its weapons, cant be penetrated by any weapon at all, can force a reroll if the opponent does glance and rolls a 5 (destroyed for a skimmer moving more than 6"). Therefore on average, a weapon has 50/50 shot at hitting, and then they have to roll high enough to glance (with 13 armour, which isnt bad at all), and, presuming they manage to hit AND glance, only have a 1 in 6 shot of destroying. Therefore the Hammerhead is probably better protected than any other vehicle in the game (except maybe Eldar Skimmers, I dont know much about them).
Both are good, but definately get the Hammerhead first. Its better rounded.
The broadside excels at supporting the Hammerhead. Broadsides can easily remain out of reach and still shoot because of their excellent range, and their railgun works magic against vehicles. Having a boradside can allow your Hammerhead to use a submunition round more often, and the 'suit can pick off counter vehicles that might get the hammerhead.
So, both are great, but the broadside is better in conjuction with the hammerhead, while the 'head is versatile enough to do anything.

I think it's not a good compairaison, but thats just me.
There both good where they are supposed to be good.
But definatly get the Hammerhead first, they are simply better than a single Broadside under 1000 pts.
But everything Shas'O Briguy said hits the nail on the head.
i raither take hammerheads then broadisdes UNLESS bersing necrons which i will take broadside and ion head

The more I use Broadsides the more I like them, they are good against almost any army, they are a more accurate and cheaper anti-armor unit then Hammerheads, but far less mobile and durable. Yes Las Cannons are there bane, but there still good. With the new Nid codex out they become even more important for taking down Carnifexes and Hive Tyrants.
Hammerheads have to big advantages over broadsides, submutions and moblity. I actually dont use them that much for anti-tank work, mainly blowing holes in medium and light infantry units. They are great against swarm and tank heavy lists. Dont forget Ionheads, I use them just as much if not more, they are great against Necrons, marines, and Eldar.
Pairing either unit with pathfinders makes both units far more deadly still, pin point accuracy and NO COVER SAVES(!) will ruin your opponets day. Yes, they are expensive but they are worth it in any game over 1500.
By playing Pathfinders, Broadsides and Hammerheads puts down a stupid amount of powerful accurate fire any opponet with his salt will know these are the things to focus on, allowing your Stealth suits, FW, drones, and Kroot almost free reign.
Who brings a Hammerhead to a 500 point fight?!
