I was just wondering... does giving your boss 2 PKs actually do anything for him? It appears that he gets 4/5 attacks regardless of if he has one or two.
From a wargear prospect, its a massive points sink. You get the same additional attack by giving him a choppa instead of an additional PK, and you can then use the choppa to get your attacks off at initive value (while still reducing armour saves).
From a modeling angle, though...
Modeling your boss with two PKs while having him armed with a choppa and a PK on paper would work (I've seen it done before). Simply state that when he goes at initive value, he simply raises the giant honking things above his head and begins to crush them down on all and sundry.
Besides, it'd look cool.

Since you can only use a single CCW per turn (just getting the additional attack bonus with a second single-handed CCW), it would make no difference using one PK or two PK's in how the attacks are actually made. The only difference between one and two is the extra attack, which can be gained a lot easier by using a Choppa or a Slugga, etc.
However, I'm sure nobody would get angry at you if you just did it for modelling purposes.
I'm agreeing with Nemesis, it would be worked out utilizing the power claw attack regardless if your using the choppa or claw. I would also model the figure with 2 power claws for fun, but explain to my opponent and clearly outline it on my list
