I've heard all of the different types of crisis suits (fireknife, helios, etc.) but I have no idea what they mean. Could a tau veteran please list them and tell me what they all have?

Popular Crisis Suit configurations are as follows:
(equipment in parentheses is generally for Commanders more than rank-and-file suits. To make room for these, just hardwire another piece of gear)
Fireknife: Plasma Rifle, Missile Pod, Multi-tracker, (Targeting Array)
- A useful multi-purpose suit as it allows you to take down Marines as well as light Vehicles with relative ease. This is, to the best of my knowledge, the most popular Crisis Suit configuration available.
Incidentally, if you look in the Collector's Guide, you'll find that suits of this configuration are also called Fireknife in the small fluff section included with each guide. There's also a Blinding Spear suit (I think it's Burst Cannon, Missile Pod, and Multi-tracker) and one that involves using a Flamer and Fusion Gun with Multi-tracker, which I really don't recommend, although it is cool from a fluff point of view.
Deathrain: Twin-linked Missile Pod, Blacksun Filter/Target Lock/Drone Controller + Any Drones You Like Except Marker Drones
- These suits are useful for busting light armoured vehicles and high T creatures (like the Avatar) but not much else. They are also quite cheap relative to other configurations.
Helios: Fusion Blaster, Plasma Rifle, Multi-tracker
- The weapon of choice for the discerning Tau Commander who just happens to be facing that odd Deathwing Army on a Sunday. On the flipside, they're also quite good against light and even some Heavy armour, if you're willing to take a risk in Deepstriking them. They do tend to be a bit expensive and risky to use due to the short range of their weapons (if you want to use them to full effectiveness).
Aurora: Plasma Rifle, Burst Cannon, Multi-tracker
- When paired with Markerlights, these guys can be pretty good at taking out all manner of infantry. These particular suits are a favorite of mine, along with Fireknives due to their flexibility when dealing with infantry in general. Also a few points cheaper and a decent alternative to Fireknives when points just won't allow you to take as many as you would like.
Those are all the configurations I can think of right now but there are many others. That's what I love about Crisis Suits - you can customise them in many different ways but try not to create cross-purpose suits.
