Okay, so here's the deal. Ages ago when I was starting the hobby I was kind of interested, but ended up choosing something else as my idea of the army wasn't really viable. That idea was to have an army of Nids with no guns. Note that I didn't say no shooting, I said no guns.
Basically, I reckon the Tyranids models rock, and with some of those new models like the Carnifex and Tyrant, they now rock even more (although I still have a soft spot for the old Tyrant, he just looked more... regal). But I always felt that the gun models on them really spoiled the models (personal opinion, you're welcome to your own). And yes, I know they're "symbiote weapons" and not actually guns, and all that, but that's not my point. They LOOK like guns.
My question is, assuming I allow myself use of Zoanthropes and Biovores, because their models aren't packing guns, is it possible to make a viable Nids list. I know I'd be losing out on things like the venom cannons and barbed stranglers, not to mention the other guns. I would try to make up for that by using a few Zoanthropes, and by making a very, very quick army (the Hormagaunt models are just as awesome as any of the others). I know it would be weaker than a balanced army that used guns AND close combat, but could a no-guns, mostly close-combat army work well enough?
I'm no nid expert so I won't be answering that, leave it for the pros. But another way to include shooting without guns is raveners, in addition to their rending claws and scything tallons, they can have a un-moddeled-on gun in their belly. Just a semi-useless addition.
I do, however, know that rikimaru is incredibly proud of his no gun nids that are uber fast assaulty.

Yeah there are several lists in the army list section that don't use guns. I have also vowed not to use guns, for the same reason as you. I did cheat once by using a gunfex (I was going against Eldar and chickened out when I thought about trying to rend their skimmers), but besides that I don't have any guns either.
FAST things are important, and LOTS of rending. A winged hive tyrant is a must. Lots of genestealers for the cheap source of rending. Raveners and leaping warriors are obvious choices too, but they are more specialized and not as effective overall as GSs. (raveners sacrifice durability for hormie-lke speed, warriors sacrifice cc-efficiency to provide synapse). Lictors are another good option, both as a source of rending and as a distraction.
You will be building LOTS of hormogaunts, as they will be your main source of fodder. Rippers with leaping are good fodder too, winged rippers are better... if you have the patence to model them all then it would improve them.
Zoanthropes are diesel sources of synapse, and their WB can be surprisingly good (I actualy think it's one of the best ranged weapon Nids can get). Biovores on the other hand, well, they don't really hit hard enough to have a place in this kind of setup I think.
Basically, you will be going as swarmy as you can. Speed is very important, because you aren't going to have any way to reduce your enemy's firepower prior to the hormie-charge. Skimmers will be your other big disadvantage... 3 zoan's with warp blast, maybe put it on your tyrant too, hopefuly you can immobilise them. They are both faster than you, and a b*tch to hit on cc.
Despite these two big disadvantages, I think the gun-free Nid list can still be very competitive. And I also think it is worth a try - I hate the 'guns' Nds carry, too.
Tyranids: 2500 pts
Imperial Guard: 1000 pts
Witch Hunters: 1000 pts
Warp blast is good, but very unpredicatable. Rav's with a thorax weapon can be useful for shooting before they hit CC. Swarm armys do very well against most opposition but if your really worried about skimmers and dont want guns, then take a large group of gargoyles. They are often overlooked but are great when used properly and have bio plasma as standard! (Ok they carry a gun but its not that noticable!)
Or perhaps try modeling your own guns! poptartsninja has done a cool fex with VC mounted to its back like a biovore, see the fleet colour thread.
I agree with Macewind, if the problem is how the Tyranid bioguns look, why not try Your hand at making them look more like an actual part of the creature? WBlast alone isn't enough for ranged support in my opinion, and I believe armies relying on CC and with no actual bioguns will be heavily handicapped vs vehicles as the range and amount of shots is essential to ensure the vehicles stop shooting.
Of course, relying more on the Beastly Hormas means You'll spend less time being shot at, but they're problematic because they pretty much need fast/forward Synapse... Winged Warriors are rather fragile, BLord depends on Infiltrating and a winged Tyrant is a goner as it would be the sole target for heavy weaponry as Your opponent is free to ignore Your slow CC 'Fexes for the first couple of turns (though terrain placement can be a very concrete lifesaver for the Tyrant).
But I am pretty heavily prejudiced against mostly CC armies, so just my view.

I agree with what everyone has said so far, but I also think that Spinegaunts shouldn't be overlooked as they are the best meat shields that you can get. They are basically worth no points so you can just throw them at the enemy and let them get chewed.
I reckon that hormagaunts are just a bit too expensive to be thrown away...

I agree with Solo, Spinegaunts are evil - low price and re-rolls are quite nice. Once they killed one of my attack bikes.
