Ok I have played about 5 battles against tau now with the new codex and I found that my army effectiveness has gone down significantly. With no bieltan rules I find that actually paying for troops on 1000 pts is annoying. With the new codex I find my self to have really cool new options at middle ranged shooting. Downside is that my standard tau player is pretty much always either in the back or behind cover due to his second jump thing. He usually uses something very simmular to this:
Commander plasma fusion
3 crisis with plasma fusion
hammerhead with railgun
two smaller squads of firewarriors
a sniper team
What do you guys suggest?

Teaming a farseer up with some shining spears might be a plan. Turbo-boosting spears with fortune will be very difficult to crack if you use LoS/terrain correctly to conceal them from most of the incoming fire.
Their S6 power weapons should gut battlesuits quite nicely.
You should also consider fire prisms - they are ideal for counter-balancing hammerheads, and will do to them what they are trying to do to you.
Or harlequins. All that firepower doesn't mean anything if they can't shoot you .
You have to use your speed to flush the tau out of their cover - the eldar can do most of what the Tau army can do...just better

I completely agree. Shining Spears will mess this guy up. A single round of combat from charging Shining Spears should be enough to completely wipe his battlesuits. One good dispersed shot from a Fire Prism should kill enough Fire Warriors to make them fall back and be unable to regroup, taking them out of the picture as well. It can use its focused shot to nuke the broadside as well. Also, consider taking along some Eldar Missile Launchers. They're murderous against Tau, whose basic troops lack the armor save to survive the plasma missiles.
Well, let's see what we have available in our main army:
Harlequins would be my weapon of choice here, but Scorpions would also make a good less points intensive choice with their ability to infiltrate and their power amour save.
The aforementioned Shining Spears are what Eldar can field against Tau to the most effectiveness
A guided squadron of vypers with missile launchers may prove worth taking as well.
Dire Avengers retain their armour save vs fire warriors which is a plus and would surely win on a charge. They seem like an ok choice.
I'm not sure about guardians. Perhaps storm guardians with conceal would work well against the Tau. Or you could even take Destructor and mount the squad in a wave serpent with twin linked missile launchers, pop them out in the front lines and give them a nasty flamer suprise.
2 units of Pathfinders would probably be my choice to field against Tau because of their effectiveness at range and the ability to truley exploit cover saves.
Prisms are the absolute best choice here. Dispersed shots can tear huge holes in the Tau lines and focused shots will filet their tanks. Plus, the added bonus of survivability from being a fast skimmer means it will last a while on the battlefield.
The option of taking a minimal squad of dark reapers for the indirect fire of a tempest launcher also comes to mind.

While dire avengers could outshoot tau if the held them on the edge of their 18" range (preferably killing enough firewarriors each time to keep from taking rapid fire back), I don't really like any of our troop choices against tau.
Therefore I would suggest going with jetbikes or pathfinders. Jetbikes advantage is that they are comparitivly cheap for a squad of three with shuri cannon, and they can do the shoot and scoot thing as well.
Though I suppose DA's in a waveserpent could pay off if you get lucky and don't lose the thing.
Otherwise I heartily agree with almost all the advice given so far. Though if you lack fire prisms a tank shocking falcon with a cargo of about anything could wreck plenty of havok on the tau lines.
