What do Tau fear the most when fighting Necrons? Mind you I mean something that can actually survive and still be useful. I know the Deceiver is good because of his mind tricks and their weak leadership, but he gets nailed by railguns on the first turn... Alot of them... Taking a Monolith would be a waste of points... Any tips?
For the most part, I plan on using mainly Destroyers to keep a mobile army.

Warrior mass vs tau is pretty cruel. With decent res orb coverage tau really ain't going to be stopping them.
Mass destroyers is..risky, they are in low enough numbers for tau to railgun them and plasmagun them.
Believe it or not, a unit of scarabs scare the hell out of tau, if they make combat (which isn't hard with a bit of thought) they can tie up huge massses of firewarriors leaving the rest of your list to maim the expensive stuff.
As you said, c'tan and monolith aren't worth their points vs tau.
Immortals are a godsend, denying most tau armour and being assault weaponry they do give you the chance to take the initive as it were.
Wraiths work but are very vulnerable to fire and I myself can't justify them vs tau.
Heavy destroyers are good at busting hammerheads, but they will always be a railguns' first target, so I wouldn't take them.
A decent block of warriors (maybe 30+) a squad or two of destroyers, some scarabs, some immortals and MAYBE a tomb spyder shouldn't do too bad.
Yeah, I was thinking about a mass Warrior type of thing, too... Would be pretty slow going though.
Also heard of the old VoD trick with Immortals, too, that's pretty useful.
you have almosts equal firepower as tau. The few armies that can match that are necrons, the imperium, and chaos. Just shoot fire warrior squad against warriors. You got WWB and they dont =P take that stupid tau.
Your firepower isnt as great for warriors. but everything else they are better at. 10 destroyers 3 heavies and a lord as a fire base should wreak quite some havoc. take out priority threats such as railguns, battle suits, and heavy fire power stuff.
The few armies that necrons beat in close combat are tau, orcs, imperial gaurd, and did i mention tau? they have virtually NO close combat. Same int, better armor save, stronger and tougher. Never underestimate necron close combat, they are space marines with int 2. and little close combat choices, or should i say little choices at all.
everything else that was stated before is all true and a great idea. Warrior mass would suck for the tau player. VoD immortals close to closecombat behind the lines, shoot em up, and charge next turn. 10 immortals could probably take over 20 fire warriors. Maybe not as effective against kroot but still deadly. toughness 5 is amazing.
Pariahs...yea no WWB but killers in close combat, get into combat with a battle suit and warsythe it. They also are killers to low LD troops. They can shoot and chop, but are very expensive.

I would agree with the massed Warriors, VoD and Res Orbs, and i'm certainly a fan of Scarabs against Tau, their waepons aren't strong enough for an instant kill, and avoiding template weapons isn't to difficult, most of what they have thats a template is high strength, i think most Tau commanders would over look shooting T3 Scarabs until its to late.
Error. Orks will eat necrons alive (or dead in this case). Pariahs don't get enough attacks to kill the orks and flayed ones do better but you often don't see flayed ones in sufficeint numbers (But FO do go toe to toe with orks and win).The few armies that necrons beat in close combat are orcsReally do not use pariahs vs tau. Why? the tau will maim them as they close for CC. The whole idea about necrons vs Tau is to really offset their superior firepower by always being able to make saves (on top of your T4 and 3+ armour).
I have found that tau have trouble against warriors and immortals. Unless he is using may pie plates.

A walking Lord with VoD, a squad of Immortals, and the rest Warriors? Maybe one or two squads of Scarabs, since they're cheap... Hopefully I can do this for a 1000pt game... Considering 360 equals 20 warriors... x_x"
Ive always found 2 full blocks of warriors with a resorb lord will do horrible amounts of damage. Remember use a flank when marching upon tau. It will deny your enemy some shots.
I also found taking a destroyer lord with res orb, warcythe, and gaze of flame, 3 full squads of destroyers and just bum rush a flank. Deploy behind the warriors and when its your turn just fly over them. Turbo boost to get the inv. save and 2nd turn just assault them hard. Its risky yes but tau are so bad at cc its worth it IF DONE RIGHT! If kroot are on the table try and do it so they don't assault you. Just fire into them then assault.
In the rule book, on page 5, it says:
