Make all your units 5 maybe 6 models strong. 10 is way too unwieldy. Use 2 groups knights as 1 force. Whatever one charges or is charged, flank the opposing unit with the 2nd group. I'd drop a few standards and the banner of sigismund as it is not worth it for a group of 5 knights. Throw a cannon in there too. If you really don't want a cannon... I don't know, maybe give the grand master the mace of helsturm?
