Basically, I'm looking for a fun new medieval fantasy type game that *isn't* Warhammer Fantasy. Bonus points for a game that has gnolls as any sort of playable faction.

That's a difficult question, as there are a lot of Fantasy miniatures and rules out there but not many that are widely played... you might want to have a look at Home | Privateer Press as Warmachine and Hordes are quite popular and have medieval influences (mostly Warmachine bizarrely), or, although it's quite obvious and completely different from warhammer, DnD?

Looked at Hordes/Warmachine, warmachine looked a bit too techy for my taste in fantasy. I'm looking for something a little more tolkien-esque, and I'm avoiding dungeons and dragons miniatures because it lacks the painting and modeling aspect I enjoy so much.

Um... have you tried Lord of the Rings (GW)? Apart from that, I don't know any mainstream/popular army based fantasy game.

It's not medieval but Warcanto is pretty cool. As always it's just finding someone else who plays!
